These lovely Micarta Steak Knives were designed special for Chef/Owner Daniel Humm of New York's Eleven Madison Park and NoMad restaurants, both in New York City.  Chef Daniel Humm came to us looking for an elegantly-designed steak knife option for his retaurants.  This elegant set includes 4 knives with Micarta handle and high- carbon stainless steel blades.

A native of Switzerland, Chef Daniel has used Victorinox Swiss Army Cutlery since the age of 14, when he started his culinary apprenticeship.

The handle of this knife is made with a resilient composite linen material called Micarta.  The handle features a cross grain pattern which will develop a unique patina over time and is perfectly integrated into the high-carbon stainless steel blade.

The composition of the blade employs a very similar manufaturing process to the well-known red Swiss Army Knives and was selected to be featured at Daniel Humm's restaurants because of its superior edge retention and surgical-grade slicing ability.
